Two lbs sugar, 1 1/2 lbs butter, 2 lbs flour, 4 lbs currants, 4 lbs raisins, 1 lb citron. 10 eggs, 1/2 pint syrup, 1/2 pint sour milk, 1 gill fruit juice, 1 cup chopped almonds, 1 teaspoon soda, 1 tablespoon each of mace, cloves, cinnamon and 1 nutmeg.
One-half lb flour, 1/2 lb butter, 1/2 lb sugar, 5 eggs, 1 1/2 lbs raisins, 1 lb currants, 1/2 lb citron, 1/2 tablespoon mace, 1 1/2 tablespoon cloves, l tablespoon each of cinnamon and nutmeg. Scant 1/2 teaspoon soda, 1/4 cup syrup, and 1 cup chopped nuts.
Two lbs sugar, 2 lbs butter, 2 1/2 lbs flour, 15 eggs, 1 lb citron cut fine, 3 lbs currants, 3 lbs stoned raisins, 1/2 cup wetting, 1 cup molasses, 1 teaspoon soda, 2 nutmegs, 1 tablespoon each, cloves, cinnamon and mace, 1 orange. Nuts may be added. Bake 4 or 5 hours. Will make 2 large cakes.
One lb flour, 1 lb butter, 1 lb sugar, 3 lbs raisins, 3 lbs currants, 1 lb citron, 1/4 lb flour in which to roll fruit, 12 eggs, 4 nutmegs, 1 oz. mace, 1 teaspoon each of soda, cinnamon, cloves and 1/2 teaspoon allspice, 1/2 pint molasses. Chop half the raisins. The cake is much improved by stoning all the raisins. Bake in a deep pan in a moderate oven for several hours. Cake is much improved by baking several months before using.
