No. 499. - Chiccory is extensively used by Germans as a substitute for coffee, and large quantities of the prepared root are annually exported to this country for a similar purpose. It is also prepared in this country now.

No. 500. - Chiccory is cultivated the same as carrots. In the fall the roots should be taken up and cut in small pieces and put where they will dry. Dry them the same as you would dry apples. When required for use it should be roasted and ground like coffee.
