4 quarts barley flour 2 tablespoons salt 1/2 cup baking powder
3 quarts milk 16 eggs, beaten separately 1 1/2 cups shortening
Sift dry ingredients together; add milk and well-beaten yolks, then melted fat. Fold in stiffly beaten whites. Heat one side of waffle iron; turn, and heat other side. Grease both sides well. Put tablespoonful of mixture in each compartment, near center of iron. Cover, and turn almost at once. Cook until brown on both sides.
