Prepare the chops as for broiling; rub each side of the chops with the cut side of an onion, sprinkle with salt and pepper if desired, then egg-and-bread-crumb and fry in deep fat five or six minutes. Move the fat to the back of the range, after the chops are immersed in it, to complete the cooking. Serve as above. Pass tomato sauce with the chops. "Frenched" chops are usually preferred for this dish.

Pan-Broiled Mutton Chops Recipe

Prepare the chops as usual, but trim off the fat rather more closely. Put the chops in an iron frying-pan, heated very hot. Turn as soon as the under side is seared over and sear the other side; turn often and cook from six to ten minutes. When all are cooked, arrange against the side of the pan and brown the fat on the edge. Spread with butter, and sprinkle with salt and pepper. Tomato sauce is usually acceptable with these chops.
